SUGGESTED MENUS

    

If you prefer, instead of integrating a menu from the above options, you can choose one of the following menus I suggest:

Menu 1
CALDO TLALPEÑO: A chicken soup made out of tomatillo, cilantro, chicken, chile chipotle, vegetables and masa (tortilla dough) balls.
ARROZ ROJO:  Rice fried in vegetable oil and then cooked with onion, garlic clove and tomatoes, juices.
CHICKEN OR PORK MEAT IN SALSA MORENA: Chicken or pork meat in a salsa made with orange juices, 2 different dry chiles, onion, garlic clove and almonds.

Menu 2
SOPA TARASCA: Black bean soup, garnished with tortillas, Mexican cream, cheese and avocado.
 ARROZ VERDE: Rice fried with vegetable oil and then cooked with poblano pepper and cilantro juices.
ALBONDIGAS CON RAJAS: Beef meat balls with poblano chile strips.

Menu 3
SOPA DE RAJAS DE CHILE POBLANO:  Soup made out of poblano chile strips, potatoes and masa (tortilla dough) balls.
ARROZ BLANCO A LA MEXICANA: Rice fried in vegetable oil and cooked with chicken broth, onion, garlic clove, and lime.
POLLO O CERDO CON CHORIZO y NOPALES: Chicken or pork meat in a sauce of tomatoes, chorizo (sausage), nopales (cactus pad) and chipotle chile.

Menu 4
CREMA DE CHAYOTE: Smooth and creamy vegetable pear soup (the vegetable is pear shaped). 
ARROZ ROJO:  Rice fried in vegetable oil and then cooked with
onion, garlic clove and tomatoes, juices.
POLLO O CERDO CON NUEZ Y CHILE ANCHO: A chicken or pork meat served with a sauce made with ancho chile, pecans, raisins and tomatoes.

Menu 5
SOPA DE HABA: Soup made out of dry fava (lima) beans cooked with tomatoes, onion, garlic, and garnished with chile pasilla.
ARROZ BLANCO A LA MEXICANA: Rice fried in vegetable oil and cooked with chicken broth, onion, garlic clove, and lime.
CHILE ANCHO RELLENO DE FRIJOLES: Ancho chile is a dry chile that you stuff with, black beans, topped with cream and cheese and baked in a tomato sauce.

Menu 6
SOPA DE TORTILLA: Soup made out of dry chiles, tomatoes, onion and garlic, garnished with tortillas, cheese, cream and avocado.
ARROZ BLANCO A LA MEXICANA: Rice fried in vegetable oil and cooked with chicken broth, onion, garlic clove, and lime
POLLO EN PIPIAN VERDE: Chicken in a sauce made out of pumpkin seeds, poblano peppers, spices and vegetables.

Menu 7
CALDO TLALPEÑO: A chicken soup made out of tomatillo, cilantro, chicken, chile chipotle, vegetables and masa (tortilla dough) balls.
ARROZ BLANCO A LA MEXICANA: Rice fried in vegetable oil and cooked with chicken broth, onion, garlic clove, and lime.
CERDO o POLLO EN PIPIAN ROJO: Pork meat or chicken in a sauce made with almonds, pumpkin seeds, cumin, paprika and chiles guajillo (dry chiles).
